My Secret Energy Recipes

If not daily, then randomly throughout the week people ask me how I have so much energy, how I can manage happiness and life and beach and trails and reading and working and all the things in between. Here are the secret recipes that have always worked for me. And then there is the newest one, but we will save that for later.

chard and bone broth.jpg

Step 1

Bone Broth and Swiss Chard

Energy comes from new and exciting and easy and quick little meals here and there. My favorite as of today is Red Swiss Chard or a mix of all the colors. If I am out of chard or want to try something new I add spinach or kale instead. (Bok Choy is one of my new ingredients that I LOVE). Just slice the chard down the center on both sides of the stem, bunch up and chop a few times. I slice up the stems and add for pop and color (entire plant is edible). Cook a little longer if add stems.

Step 2

Spices, Herbs, Fresh, Dry

I add a multitude of spices and herbs but if you want the secret to anti-inflammation and energy and detoxification and what I feel like super charges my brain and will power through the day, add fresh TURMERIC and GINGER. I way over add here, but you can slice a few pieces into the dish for massive flavor. I eat it raw as I simmer too.

Add fresh turmeric, ginger, garlic, onions. Add dried or fresh oregano, basil, parsley, cilantro and olive oil. Let simmer a little longer. Sometimes at this point I add a little more bone broth, black pepper and cayenne.

Step 3

Drop in the Mushrooms

I turn the heat up a little here and if needed add more bone broth. Cook for a minute or two and turn back down, stirring and keeping the bay leaves and ginger slices underneath if possible for the best distritution of flavor <3

Step 4

If you like, add chicken and couscous

If I am creating a dish for dinner I will sometimes add chicken and couscous, but more often than not the bone broth and all the spices and herbs and mushrooms are enough to snack on whenever I need that edge. Enjoy! Let me know what you think or how you changed it up. LOVE new ideas!
